Easy Cinnamon Raisin Bran Bread


This is a delicious breakfast bread that you can serve with marmalade or a little margarine or any fruit-based jam. Complete your breakfast with some scrambled eggs and a beverage and you have a satisfying breakfast!

1 1/2 whole wheat flour
1/2 cup sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp. cinnamon
1 1/4 cups of unprocessed wheat bran (Hodgson Mill is the best)
1 cup seedless raisins
1/4 softened butter
1 1/4 cups hot water
2 egg whites
1/2 tsp. vanilla
3/4 cups of chopped nuts (either walnuts, pecans, or cashews)

1. Preheat oven to 375 F. Stir together flour , sugar, baking powder, soda, salt, and cinnamon.
2. In a separate bowl, combine wheat bran, raisins, butter, and hot water. Mix until the butter melts, and then add eff and vanilla. Beat well.
3. Add the mixed dry ingredients and nuts to the batter. Still until all ingredients are mixed well.
4. Spread batter in an oiled 9x5x3 loaf pan and bake for about 55-60 minutes. Cool before slicing.

Prep Time: 15 mins. Cooking time: 1 hour.
